As anyone who has lived in a dorm knows, cooking can be tough. The most intricate appliance you own is probably a microwave or a coffee maker. This, and your lack of time to prepare food, makes it super easy to just eat fast food or frozen dinners all of the time - which can get really expensive, really fast. Not to mention how bad it is for you! Here are a few things that you can make with your coffee maker or microwave. No fancy kitchen anything needed! You won't even need a knife. The best part? They are healthier than your go-to fast food AND are really cheap! You can thank me later.
2 large eggs
Veggies of choice (bell peppers, mushrooms, and onions are my favorite!)
Spray a mug with non-stick spray. Crack 2 eggs into the mug. Add a pinch of salt and some pepper and whisk with a fork. Mix in your veggies and cheese. Microwave for 2-3 minutes, stopping every 20-30 seconds to stir. You know it is cooked when there are no more icky liquid eggs. If you stir properly this won't happen. Let it cool a little bit before eating!
*Note: You can buy pre-cut/diced fresh vegetables at your local grocery store. They are a little more expensive, but are worth it since you don't have to dirty anymore dishes and can just toss them in without cutting them.
Pizza in a Mug
2 canned biscuits (store the rest in a baggy in the fridge)
Spray a mug with non-stick spray. Put 1 biscuit in the bottom of the mug and then layer the tomato sauce, cheese, and mini pepperonis on top of it. Repeat this again to make 2 biscuity-pizza layers. Make sure you put on a lot of sauce so it isn't dry. Place in the microwave for 2-3 minutes, stopping every 30 seconds or so to let it resettle. *This can make a big mess if you don't keep your eye on it!* Make sure to let it cool a little before eating it in the mug with a spoon.
Cake in a Mug. Yes, Cake.
1/3 Cup boxed cake mix (my favorite is funfetti)
Vanilla almond milk
Canned frosting (or whipped cream)
Pinch of salt
Crack the egg into a mug, add a pinch of salt, and whisk it with a fork until fluffy. Then add in a little vegetable oil (like half a cap full... not really enough to even measure) and 4 or so spoon fulls of almond milk. Stir until well combined. Now add the 1/3 cup cake mix and stir until there are no lumps. Microwave for 2 or so minutes, keeping an eye on it so it doesn't overflow. You will know it is cooked when it starts rising up over the mug and still holds its shape. After letting it cool slightly, put frosting and sprinkles on top. Enjoy!
This cake tastes a little bit eggy, but the frosting helps cover it up. It is hard to say no, though, to so much protein (egg AND almond milk) when you get to call it CAKE!
4 Things You Can Cook in Your Coffee Maker
I recommend a k-cup type coffee maker as opposed to a pot one for this. Just open the instant noodle package, place it where you would normally put a mug, and run your coffee maker with no coffee in it. Let the noodles sit for 3 or so minutes before eating. You can even add an egg for some protein! Done!
2. Blanched Broccoli
Same thing as the noodles. Fill a mug (or coffee pot) a little over halfway with raw broccoli, and run your coffee maker with no coffee in it. Let it sit for a few minutes before draining the water, seasoning it, and eating. Yum.
3. Instant Oatmeal
Fill a mug with the instant oatmeal, run your coffee maker with no coffee in it, wait, and stir. Eat. Done.
4. Soft Boiled Eggs
What are soft boiled eggs, you ask? Ever seen in movies where fancy people have an egg on this pretty little pedestal, crack it open, and dip toast into it? That is a soft boiled egg (AKA, a little runny on the inside). And yes, you should dip toast in it. And be fancy.
This one is best for a coffee pot but could still work in a single mug. Just put a few eggs in the pot and run your coffee maker with no coffee in it. Leave the coffee burner on hot and let it sit for 5-7 minutes. Then drain the water and eat!
